Ingredients

  • For the Dip:
    • 1 can (refried beans, about 15 oz)
    • 1 cup sour cream
    • 1 packet taco seasoning mix (or homemade)
    • 1 cup guacamole (store-bought or homemade)
    • 1 cup salsa (mild, medium, or hot, based on preference)
    • 1 cup shredded cheddar cheese
    • 1 cup chopped tomatoes (or diced cherry tomatoes)
    • 1/2 cup sliced green onions
    • 1/2 cup black olives, sliced
  • For Decoration:
    • 1/2 cup sour cream (for the ghost decorations)
    • Additional black olives (for eyes and decoration)

Instructions

  1. Layer the Ingredients:
    • In a 9×13 inch dish or a large serving platter, start by spreading the refried beans evenly across the bottom.
    • Next, mix the sour cream with the taco seasoning and spread it over the refried beans.
    • Layer the guacamole on top of the sour cream.
    • Spread the salsa over the guacamole.
    • Sprinkle the shredded cheddar cheese evenly over the salsa.
    • Add the chopped tomatoes as the next layer.
    • Finish with a layer of sliced green onions and black olives.
  2. Create Spooky Decorations:
    • In a small bowl, place the 1/2 cup of sour cream. Use a piping bag or a plastic bag with a corner snipped off to create ghost shapes on top of the dip.
    • Use additional black olives to create eyes for the ghosts by cutting small circles and placing them in the center of the sour cream ghost shapes.
  3. Chill and Serve:
    • Cover the dip with plastic wrap and refrigerate for at least 30 minutes before serving to let the flavors meld.
    • Serve with tortilla chips, veggie sticks, or pita chips for dipping.

Tips and Variations

  • Cheese Options: Use a mix of cheeses such as Monterey Jack or pepper jack for a spicier kick.
  • Vegetarian Option: This recipe is already vegetarian; you can add black beans or corn for extra texture.
  • Extra Spookiness: Add plastic spiders or Halloween-themed decorations on the serving platter for added effect.
