Fan Favorite Stuffed Peppers

These stuffed peppers are a flavorful and nutritious dish that combines minced meat with tangy feta cheese, aromatic ramson (wild garlic), and juicy tomatoes. They make for a satisfying meal that’s perfect for dinner or a hearty lunch!

Ingredients

  • 4 large bell peppers (any color)
  • 1 pound (450g) minced meat (beef, lamb, turkey, or a mix)
  • 1 cup feta cheese, crumbled
  • 1 cup cooked rice or quinoa (optional for added bulk)
  • 1 cup fresh ramson (wild garlic) leaves, chopped (or substitute with spinach or regular garlic if unavailable)
  • 1 cup cherry tomatoes, halved (or 2 medium tomatoes, diced)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Bell Peppers:
    • Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. Cook the Filling:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
    • Add the minced meat to the skillet and cook until browned, breaking it apart with a spatula. Season with salt, pepper, oregano, and paprika. Stir in the chopped ramson (or garlic) and cook for another 2 minutes.
    • If using, mix in the cooked rice or quinoa, followed by the halved cherry tomatoes. Remove from heat and let the mixture cool slightly.
  4. Stuff the Peppers:
    • Stir in the crumbled feta cheese into the meat mixture. Carefully stuff each bell pepper with the filling, packing it gently to fit.
  5. Bake the Peppers:
    • Pour a little water into the bottom of the baking dish to help steam the peppers. Cover the dish with foil and bake for 30-35 minutes. Remove the foil for the last 10 minutes of baking to allow the tops to brown slightly.
  6. Serve:
    • Once the peppers are tender, remove them from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley or basil before serving.
